RED PEPPER AND CREMINI PENNE

Ingredients
  • 75 gr penne (dry)
  • 2 medium creminis, sliced
  • ½ red pepper, cubed
  • 2 small tomatoes, cut in half
  • ½ red onion, sliced
  • 1 scallion, chopped
  • 1 tbsp roasted garlic olive oil (can be replaced with simple or herbed olive oil)
  • Salt/pepper
Instructions
  1. Cook pasta according to package instructions. Leave aside.
  2. Heat up olive oil on medium.
  3. Add red onion, red pepper, creminis and cook on medium for 5-7 minutes, stirring occasionally.
  4. Add tomatoes and cook for 2-4 minutes, or until they start to lightly brown.
  5. Add penne to the pan, mix with cooked vegetables, and season. Leave on medium heat for a minute, then serve.
