Mushroom Bruschetta

Sooo these bruchettas are totally delicious!

They’re cooked in hoisin sauce and lime juice so the flavors are ah-mazing.🙆

Ingredients
  • 150 gr mushrooms (button, oyster), sliced
  • 1 tbsp hoisin sauce
  • 2-3 tbsp lime juice
  • 2 garlic cloves
  • 1 tsp olive oil
  • ⅔ slices of preferred bread, toasted
  • Salt
  • Pepper
  • Optionally, 3-4 cherry tomatoes and fresh parsley, cilantro or spring onion.
Instructions
  1. Heat up a non-stick pan on medium heat.
  2. Slice mushrooms and add them to the pan. Cook for 2 minutes on medium heat and add hoisin sauce and lime juice. Cook for another 2-3 minutes, or until the sauce has reduced.
  3. Season with salt and pepper.
  4. Add olive oil to grill and grill bread slices for 1-2 minutes on each side, or until golden.
  5. Cut the clove of garlic length wise and stick a fork into half of the clove, leaving the cut side open, then rub the garlic on the bread on 1 side.
  6. Add mushrooms on top of each slice and serve.
  7. Optionally, you can add sliced cherry tomatoes on bruschetta, fresh parsley or cilantro.

HOMEMADE PEANUT BUTTER AND CHOCOLATE GRANOLA

Hey guys! So you like granola, right? Of course you do, who doesn’t? How about taking it to the next level with this beauty?

The main ingredients for this chunky granola are cashews, almonds, rolled oats, PB, and cranberries. Cranberries are optional and you can choose other dried fruits such as pineapple, apricots, or raisins.

This granola is chunky, crunchy, peanut butter-y, healthy, easy to make and delicious!

Among other nutrients, you’ll get 24.7 g of fiber, 53 g of protein, 333 g of calcium, 11 mg of vitamin E, 598 mg magnesium, 12 g of zinc, and 14 g of iron.

Ingredients
  • 60 g almonds, toasted and cut in different sizes
  • 60 g cashew, toasted
  • 11 tbsp rolled oats
  • 2 tbsp smooth peanut butter
  • 1 tbsp coconut oil
  • 2 tbsp dried cranberries, cut in small pieces
  • 4 tbsp brown sugar
  • 1 tbsp chocolate chips, more if desired
Instructions
  1. Toast almonds and cashew on dry pan for 3-5 minutes, until they are golden.
  2. Cut almonds in different sizes, depending on preferences.
  3. Melt coconut oil and sugar on low heat and add 2 tbsp of peanut butter. Mix until smooth and consistency a bit runny.
  4. In a medium bowl, mix rolled oats, cashew, almonds, dried cranberries, and chocolate chips.
  5. Pour peanut butter mixture in bowl and stir gently until all ingredients are coated.
  6. Transfer into food container and press over it using a spoon.
  7. Refrigerate for 1 hour, then break apart and store it in jar or food container.
  8. Optionally, add more chocolate chips after chilling.

Fluffy and packed with nutrients, these savory pancakes are perfect for breakfast, brunch, as snacks, or even as a side dish. They’re delicious, filling, and so easy to make. You’ll get about six pancakes from this recipe and 944 IU of vitamin A per pancake. Also, you’ll be gettin’ 33 mg of vitamin C, and 47 mg of magnesium. Healthy pancakes FTW! 👊🏻💯

Optionally, you can serve the pancakes with creme fraiche, tzatziki, or vegan sour cream to keep up the lactose-free spirits 🙆.

Ingredients
  • 150 g/ ⅞ cup red bell pepper, diced into small cubes
  • 100 gr/ ⅝ cup sweet corn, canned
  • 50 g/ ⅓ leek or red onion, finely copped
  • 2 medium eggs
  • 110 g whole wheat flour
  • 1 tsp dry basil
  • 1 tsp baking powder
  • 1 tbsp olive oil
  • Salt
  • Pepper
Instructions
  1. In a medium bowl, beat eggs and add water.
  2. Sift flower, baking powder, and add salt, pepper, and basil.
  3. Mix in red bell pepper, sweet corn and leek.
  4. Add 1 tbsp of olive oil to pan and scoop two spoons of batter for each pancake.
  5. Cook on each side for 2-3 minutes or until fluffy and golden.
  6. Done!
Notes
Try other spices with this recipe as well, such as fresh dill, za'atar, or mild curry powder.
Cover pan with lid for 1 minute for extra fluffy pancakes.

HONEY WALNUT CREAM CHEESE

This cream cheese takes like 5 minutes to prepare, it only needs 4 ingredients, and it’s freaking awesome 🙆🏼. Great for a quick breakfast, as a snack, dessert?! Yea, totes. You can spread it on your favorite breads, bagels, cakes, or cupcakes. I usually use organic acacia honey. However, any other good quality honey will do the job 👌🏼. Those 2 minutes spent on toasting the walnuts will be well worth it, so totally toast them. Do it. For real.

  • 200 gr/ ⅞ cup plain cream cheese, any fat %
  • 3 tbsp organic acacia honey, or other good quality honey
  • ½ tsp pure vanilla extract
  • 40 gr/ ⅓ cup walnuts, toasted and chopped
Instructions
  1. Toast walnuts in dry pan for 2 minutes, tossing them frequently. Chop walnuts.
  2. Mix cream cheese with honey, vanilla extract, and chopped walnuts.
  3. Ready to serve on bagels, breads or cakes.

Ingredients
  • 110 g/½ cup butter, at room temperature
  • 110 g/½ cup brown sugar, packed
  • 135 g/ ½ cup peanut butter, smooth or crunchy
  • 120 g/1 ½ cup rolled oats
  • 1 egg
  • 60 g/ ¼ cup milk
  • 50 g/1 cup grated carrots
  • 130 g/1 cup AP flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 120 g/1 cup good quality white chocolate, roughly chopped or white chocolate chips
Instructions
  1. Preheat oven at 180 degrees C/ 375 degrees F.
  2. Cream together butter, peanut butter and sugar.
  3. Add egg and milk, and stir.
  4. Sift flour, salt and baking soda and stir.
  5. Stir in carrots, rolled oats, and chopped chocolate or chocolate chips.
  6. Drop 1 teaspoon of cookie dough onto baking paper for 35 normal size cookies large cookies or 1 ½ tablespoons of cookie dough for 9 large cookies.
  7. Bake for 15 minutes for normal size cookies or 25-30 minutes for large size cookies.
  8. Cool down cookies before serving.
