Instructions
Heat up olive oil on medium and add chopped onion. Cook for 2-3 minutes or until translucent.
Add potatoes, pearl onion, garlic, and tomato puree, and water. Cover with lid and cook for 25-30 minutes, stirring occasionally.
Season with salt, pepper, and thyme. Add other preferred herbs if desired.
