FUNFETTI AND OATMEAL COOKIES
Ingredients
- 75 grams/ 3 oz flour
- 75 grams/ 3 oz rolled oats
- 75 grams/ 3 oz muscovado sugar
- pinch of salt
- 75 grams/ 3 oz butter unsalted
- 1 tbsp almond milk or preferred milk
- 1 tsp vanilla extract
- 1 tbsp honey
- 3 tbsp funfetti sprinkles
Instructions
- Preheat oven to 180 C/ 356 F. Line a baking tray with baking parchment.
- In a medium bowl, mix flour with rolled oats, sugar and salt.
- In a small saucepan melt butter, stirring, and mix with milk and vanilla extract. Add to the premixed dry ingredients. Mix until well combined.
- Spoon onto a baking tray and shape into rounds.
- Bake for 7-9 minutes.
- Leave to cool for 5 minutes before removing from tray. Let cool completely.
- Spread a small amount of honey on each cookie top and dip it in funfetti sprinkles.
