POTATO AND PEARL ONION STEW

Yooouuu guuys, it’s getting chilly. Real chilly. Kinda love it, kinda hate it. Also, I’ve been making suitable comfort food for this weather, like this soul warming stew. Easy, peasy (no peas involved, you can totes add some though) to make and so freaking good 💛

Potato and pearl onion stew

Ingredients
  

  • 600 grams white potatoes cubed, medium
  • 200 grams pearl onions
  • 1 onion medium, chopped
  • 400 grams tomato puree
  • 5 cloves garlic
  • salt
  • pepper
  • 1 tbsp olive oil
  • 200 ml water
  • thyme

Instructions
 

  • Heat up olive oil on medium and add chopped onion. Cook for 2-3 minutes or until translucent.
  • Add potatoes, pearl onion, garlic, and tomato puree, and water. Cover with lid and cook for 25-30 minutes, stirring occasionally.
  • Season with salt, pepper, and thyme. Add other preferred herbs if desired.
