RED PEPPER AND CREMINI PENNE

Ingredients
- 75 gr penne (dry)
- 2 medium creminis, sliced
- ½ red pepper, cubed
- 2 small tomatoes, cut in half
- ½ red onion, sliced
- 1 scallion, chopped
- 1 tbsp roasted garlic olive oil (can be replaced with simple or herbed olive oil)
- Salt/pepper
Instructions
- Cook pasta according to package instructions. Leave aside.
- Heat up olive oil on medium.
- Add red onion, red pepper, creminis and cook on medium for 5-7 minutes, stirring occasionally.
- Add tomatoes and cook for 2-4 minutes, or until they start to lightly brown.
- Add penne to the pan, mix with cooked vegetables, and season. Leave on medium heat for a minute, then serve.
