
Delightful sweet potato and zucchini salad that gets me thinking of summer.π Easy to make and sooo good.
Sweet potatoes are rich in many valuable nutrients. They contain vitamin A, vitamin C, manganese, riboflavin, phosphorus, vitamin E, vitamin K, calcium and iron.
Orange-fleshed sweet potatoes are an excellent source of beta-carotene. As well as boosting immunity, vitamin A is also essential to maintaining a healthy eye-sight. It also assists in the production of immune cells that are responsible for fighting diseases and infections.
One medium sweet potato can meet 438 percent of the daily vitamin A requirement. So adding just one-fourth of a sweet potato into your daily diet will reach the set requirement. Other good sources of vitamin A include carrots, kale, spinach and apricots.

Method
- Heat up olive oil in a large non stick pan over medium heat. Add zucchini and sweet potato slices. Cook for 5-7 minutes, or until potatoes turn golden. Set aside.
- In a serving bowl add mixed greens, cherry tomatoes, carrots, scallions, zucchinis, sweet potato and lemon juice. Season to taste and serve.
- Optionally, add one tbsp of garlic infused olive oil before serving.
